Pizzaiola-style aubergine medallions: the quick and tasty side dish

Wash the aubergine and tomato, then cut them into slices.
Place them on the baking tray.
Prepare the seasoning and brush it on the aubergines.
Bake at 180° for 15-17 minutes.
Then cover the aubergines with mozzarella and bake for 12-15 minutes.
