Orange bread: the recipe for the soft and fragrant Sicilian cake

Pan d’arancio , also called pan d’orange, is a typical dessert of the Sicilian gastronomic tradition. A soft cake with a pleasantly moist consistency, prepared by blending both the pulp and the zest of this wonderful winter fruit, rich in beneficial properties. Easy to make, it can be prepared in just a few minutes and, once cooked, it will release a truly irresistible fragrance.
The result is a soft and delicious dessert, perfect for breakfast , a snack or to offer to guests as a dessert at the end of the meal. For its preparation the whole fruit is used, including the peel: for this reason it is important to use organic and not chemically treated oranges. On the surface, however, for a more rustic effect, try adding flaked almonds , pecans or hazelnuts, toasted and roughly chopped. For a gluten free variant, you can replace the 00 flour with brown rice flour, while the granulated sugar with whole cane flour or erythritol , for a dessert with a very low glycemic index. Instead of seed oil, you can add an extra virgin olive oil with a sweet and delicate taste. If you like, you can also add spices, such as cinnamon, vanilla or cardamom seeds.

How to prepare orange bread

Cut the oranges into segments after washing and drying them well (1). Remove any seeds.

Transfer the oranges into a kitchen blender and blend until reduced to a cream (2).

Pour the orange cream into a bowl (3).

Add the eggs beaten separately in a small bowl (4).

Add the sugar (5).

Add the sifted flour and starch (6).

Start mixing with a whisk (7).

At this point, pour in the oil and milk, and continue mixing (8).

Finally, add the yeast and a pinch of salt (9).

Mix again until you obtain a smooth and homogeneous mixture (10).

Pour the mixture into a well-oiled 24cm diameter cake tin (11).

Cook the orange bread in the oven at 180°C for about 50 minutes (12).

Once cooked, take it out of the oven and let it cool. Then remove it from the mold and place it on a serving plate (13).

Sprinkle a little icing sugar (14).

Bring your orange bread to the table and serve (15).
