Melt butter in a saucepan over medium heat.
Stir in sugar and vanilla extract.
Bring to a simmer, then remove from heat and stir in ground hazelnuts.

Roll out the dough on a lightly floured surface to a rectangle about 30x20cm.
Spread the nut mixture evenly over the dough.
Cut the dough into 9 equal squares.
Bake:
Bake for 15-20 minutes, or until golden brown.
Let cool slightly on a wire rack.
Finish:
Spread each square with a thin layer of apricot jam.
Optionally, drizzle with melted chocolate.
