No-Bake Strawberry Kiwi Cheesecake


Instructions:

Begin by making the cheesecake filling. In a large mixing bowl, beat the cream cheese and sugar together until smooth.

In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the cream cheese mixture until well combined.

Crush the graham crackers and ground almonds in a food processor or using a plastic bag and rolling pin until they are fine crumbs. Add the melted butter and sugar and mix until the mixture resembles wet sand.

In a separate bowl, combine the sliced kiwis and strawberries. Add the organic sugar and mix until the fruit is coated.

To assemble the parfaits, place a spoonful of the graham cracker mixture into each parfait cup.

Using the Wilton #6B piping tip, pipe a layer of the cheesecake filling over the graham cracker mixture.

Add a spoonful of the fruit mixture on top of the cheesecake filling.

Repeat the layers until the parfait cups are full.

Using the Wilton #2A piping tip, pipe a dollop of whipped cream on top of each parfait.

Garnish with white chocolate chips and sliced almonds.
