Ingredients
2 cups of full-fat cottage cheese
1/4 to 1/3 tablespoons of honey (or to taste, depending on your carb allowance)
3 tablespoons of peanut butter
3 tablespoons of chocolate chips
1 teaspoon of vanilla extract
Directions
Blend Ingredients:
In a blender, combine the cottage cheese, peanut butter, honey, vanilla extract, and blend until the mixture is completely smooth. You can adjust the amount of honey based on how sweet you want the ice cream and your carb goals.
Chill Mixture:
Transfer the blended mixture to a bowl and refrigerate for at least 2 hours to cool it thoroughly, which helps achieve a smoother texture when frozen.
Prepare Ice Cream:
After chilling, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. This usually takes about 20-25 minutes.
Add Chocolate Chips:
Add the chocolate chips in the last 5 minutes of churning to evenly distribute them throughout the ice cream.
Freeze:
Once churned, transfer the ice cream to a freezer-safe container and freeze until it reaches your preferred consistency, typically about 2-4 hours.
Serve:
When ready to serve, if the ice cream is too hard, let it sit at room temperature for a few minutes before scooping.
