My nana swears by this recipe!

1. In a medium saucepan, melt the butter over medium heat.
2. Once the butter is melted, add the flour and whisk continuously for about 1 minute until the mixture is smooth and bubbly.
3. Gradually add the milk, whisking constantly to prevent any lumps from forming. Continue to cook and whisk until the mixture thickens, about 3-5 minutes.
4. Reduce the heat to low and add the shredded cheddar cheese, stirring until the cheese is completely melted and the sauce is smooth.
5. Season with salt, black pepper, and garlic powder if using. Taste and adjust seasoning as needed.
6. Serve immediately or keep warm over low heat, stirring occasionally.
Variations & Tips
For a spicier kick, try adding a pinch of cayenne pepper or a few dashes of hot sauce. You can also experiment with different types of cheese; a mix of cheddar and Monterey Jack gives a nice flavor balance.
