My mother-in-law usually eats lightly, but she really enjoyed this meal!

Preheat your oven to 300°F (150°C).
Remove the membrane from the back of the ribs for more tender results.
Season the ribs with salt and black pepper, then place them in a large baking dish.
In a bowl, whisk together the honey, soy sauce, brown sugar, minced garlic, rice vinegar, ground ginger, and olive oil to create the glaze.
Pour half of the glaze over the ribs, ensuring they are well coated.
Cover the baking dish with aluminum foil and bake in the preheated oven for 2.5 to 3 hours, or until the ribs are tender.
Remove the foil and increase the oven temperature to 400°F (200°C).
Brush the remaining glaze over the ribs and return them to the oven, uncovered, for an additional 15-20 minutes, or until the glaze is caramelized and sticky.

 

Let the ribs rest for a few minutes before slicing and serving.
Variations & Tips
For a spicier kick, add a teaspoon of chili flakes or a dash of hot sauce to the glaze. If you prefer a smokier flavor, try incorporating a teaspoon of smoked paprika. For a more complex taste, you can add a tablespoon of hoisin sauce to the glaze. To make this dish gluten-free, substitute the soy sauce with tamari. Lastly, for a different cooking method, you can finish the ribs on a grill for a few minutes to add a charred texture.
