My husband is fond of having this meal on a weeknight!

Preheat your oven to 375°F (190°C).
In a skillet over medium heat, add olive oil and cook the ground sausage until browned. Remove from skillet and set aside.
In the same skillet, add the diced bell peppers and sauté until they are tender. Remove from heat.
In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper.
Place the cooked sausage and bell peppers into two individual-sized aluminum foil pans.
Pour the egg mixture evenly over the sausage and peppers in each pan.
Spoon a layer of tomato sauce over the top of each quiche.
Sprinkle shredded cheese over the top of the tomato sauce.
Place the pans on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the quiches are set and the cheese is golden and bubbly.
Allow to cool slightly before serving.
Variations & Tips
For a spicier version, add a pinch of red pepper flakes to the sausage while cooking. You can also substitute the sausage with ground turkey or chicken for a lighter option. If you prefer a vegetarian version, omit the sausage and add more vegetables like mushrooms or spinach. For a different flavor profile, try using a blend of Italian cheeses or adding a sprinkle of fresh herbs like basil or oregano on top before baking.
