My hubby always requests this one! A keeper!

1. In a large skillet, heat the olive oil over medium-high heat.
2. Add the steak pieces and cook until browned on all sides. Remove the steak and set aside.
3. In the same skillet, add the diced onion and cook until translucent, about 5 minutes.
4. Add the minced garlic and cook for an additional minute, until fragrant.
5. Stir in the uncooked rice, beef broth, dried thyme, and paprika. Bring to a boil.
6. Reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
7. Stir in the cooked steak and shredded cheddar cheese, mixing until the cheese is melted and everything is evenly combined.
8. Season with salt and pepper to taste, and sprinkle with freshly chopped parsley before serving.
