Start by prepping the pork loin. Rinse it under cold water and pat dry with paper towels. Sprinkle the pork loin evenly with salt and pepper. Set it aside and let’s move on to the marinade.
In a medium-sized bowl, combine the minced garlic, honey, soy sauce, olive oil, dried rosemary, and dried thyme. Whisk everything together until well combined.
Now, it’s time to let the pork loin bathe in this flavorful marinade. Place the pork loin in a dish or a large ziplock bag, pour the marinade over it, ensuring it’s well coated. Let the pork marinate for at least two hours, or better yet, overnight in the refrigerator. The longer it marinates, the more flavorful it will be.
When you’re ready to roast, preheat your oven to 375°F (190°C). Transfer the pork loin to a roasting pan, pour the remaining marinade over it, and place it in the middle rack of the oven. Roast for about 60-75 minutes, or until the internal temperature reaches 145°F (63°C). Be sure to baste the pork loin with the pan juices every 20 minutes to keep it moist and flavorful.
Remove the pork loin from the oven and let it rest for about 10 minutes before slicing. This allows the juices to redistribute throughout the meat, making every bite juicier.
