Mediterranean Egg Muffins with Sun-Dried Tomatoes & Kalamata Olives

1. Preheat & Prep
Preheat your oven to 180°C (350°F).
Grease a muffin tin with olive oil or use silicone liners.
2. Make the Egg Mixture
In a bowl, whisk together eggs, milk, salt, pepper, and oregano until smooth.
Stir in the feta cheese, sun-dried tomatoes, olives, and spinach.
3. Fill & Bake
Divide the mixture evenly into the muffin tin, filling each cup about ¾ full.
Bake for 18-22 minutes, or until the eggs are set and slightly golden on top.
Let them cool for a few minutes before removing from the tin.
