In our house, it’s known as Fiesta Hobo Surprise…and let’s just say no one leaves the table hungry.

Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
Add the taco seasoning to the beef, along with a splash of water, and stir to combine.
Stir in the black beans, corn, and diced tomatoes with green chilies. Cook for a few minutes until heated through.
In a 9×13 inch baking dish, spread a layer of tortilla chips on the bottom.
Pour the beef mixture over the chips, spreading it evenly.
Sprinkle the shredded cheddar cheese over the top of the beef mixture.
Add another layer of tortilla chips on top of the cheese.
Sprinkle the chopped green onions and black olives over the top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool slightly before serving.
Variations & Tips
For a vegetarian version, substitute the ground beef with a plant-based meat alternative or additional beans. To add some heat, include a chopped jalapeño or a dash of hot sauce in the beef mixture. You can also experiment with different types of cheese, such as Monterey Jack or pepper jack, for a different flavor profile. If you prefer a milder dish, use plain diced tomatoes instead of those with green chilies.
