I’m kind of shy to admit how much I adore this meal, but it’s way too delicious not to share.


Directions
1. Preheat your oven to 350°F (175°C).
2. Pat the pork loin roast dry with paper towels and season it generously with salt and pepper.
3. In a small bowl, mix together the barbecue sauce, brown sugar, Dijon mustard, garlic powder, and onion powder.
4. Heating a large skillet over medium-high heat, add the olive oil. Once hot, sear the pork loin for about 2-3 minutes on each side until it’s nicely browned.
5. Transfer the seared pork loin onto a baking dish and brush it generously with the barbecue sauce mixture, reserving some for later.
6. Place in the oven and roast for about 40-50 minutes or until the internal temperature reaches 145°F (63°C), basting it occasionally with the reserved barbecue glaze.
7. Let the roast rest for about 10 minutes before slicing it into thick pieces.
8. Serve the slices drizzled with any remaining glaze.

Variations & Tips

If you’re feeling adventurous, try mixing your favorite hot sauce into the glaze for a spicier kick. Alternatively, you can experiment with different mustard types, like spicy brown or whole grain, to add more depth to the flavor. For a more smoky profile, add a teaspoon of smoked paprika to the glaze. A slow cooker version can be made by setting the pork loin in the cooker with the glaze and cooking on low for about 6-8 hours until tender.
