Preheat your oven to 350°F (180°C).
In a food processor, combine peanuts, walnuts, almonds, pumpkin seeds, sunflower seeds, sesame seeds, poppy seeds, and flaxseed. Pulse until the mixture is finely chopped.
Add the honey and egg white to the mixture. Pulse again until everything is well combined.
Line a baking sheet with parchment paper.
Using a spoon, scoop out small portions of the mixture and roll them into balls. Place them on the prepared baking sheet, flattening them slightly.
Bake for 10-12 minutes, or until the cookies are golden brown.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
