Preheat your oven to 350°F (175°C).
Rinse the turkey inside and out under cold water and pat dry with paper towels.
In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and paprika.
Rub the turkey inside and out with the melted butter, then season generously with the spice mixture.
Place the onion, carrots, celery, thyme, and rosemary inside the cavity of the turkey.
Place the turkey in the roasting bag, ensuring the bag is large enough to allow for expansion during cooking.
Seal the bag according to the manufacturer’s instructions and place it in a large roasting pan.
Cut six 1/2-inch slits in the top of the bag to allow steam to escape.
Roast the turkey in the preheated oven for about 2 1/2 to 3 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Remove the turkey from the oven and let it rest in the bag for 15-20 minutes before carefully opening the bag and transferring the turkey to a serving platter.
Variations & Tips
For added flavor, consider brining the turkey overnight in a mixture of water, salt, sugar, and spices before roasting. You can also experiment with different herbs and spices, such as sage or lemon zest, to suit your taste. If you prefer a more traditional presentation, you can remove the turkey from the bag for the last 30 minutes of cooking to crisp up the skin further. Just be sure to baste it occasionally with the pan juices.
