This faster method is ideal for those living in wet conditions. Spread the herbs on a baking tray and baking them in the oven at 150oF (65oC) until the leaves become friable. This process can take from 1 to 4 hours, so check periodically to avoid burning.

Freezing works best for herbs such as coriander, basil, tarragon and parsley. There are two methods for freezing herbs:

Hash method: Chop the herbs and place them in an ice tray. Fill the tray with broth or water and freeze.
Mix the herbs into a rough paste with some water or oil. Freed this mixture in an ice tray or hermetically sealed container.
