Boil water and sugar in a saucepan until the sugar has completely dissolved.
Add fresh mint leaves and simmer over low heat for 5 minutes.
Remove the pot from the heat, cover, and let it steep for 20–60 minutes, depending on the desired intensity.
Stir in lemon juice.
Strain the syrup through a fine sieve.
Optional: Add food coloring and pour into a sterile bottle.
Store in the refrigerator – lasts up to 2 weeks.
Notes
The longer the brewing time, the more intense the aroma.
The syrup can be frozen for longer shelf life.
Perfect for mojitos, lemonade, iced tea or desserts.
Sugar can be replaced with erythritol for a sugar-free version.
