8 oz elbow macaroni pasta
1 oz bacon grease or unsalted butter (see notes)
1/4 oz all-purpose flour
1 oz milk
1 tsp fine sea salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/4 tsp ground cayenne pepper
1/4 tsp ground nutmeg
8 oz shredded sharp cheddar cheese
8 oz shredded Monterey Jack cheese
For the breading:
1/2 oz all-purpose flour
1/4 tsp fine sea salt
1/2 tsp black pepper
1/4 tsp onion powder
2 large eggs, beaten
6 oz seasoned panko breadcrumbs
