Mix the flour and salt together and set aside.
Cream the butter and powdered sugar together until fluffy, then mix in the vanilla.
Gradually add the flour and salt mixture until it forms larger clumps.
Fold in the chocolate chips and chopped maraschino cherries.
Form the dough into a log about 2 inches thick, pressing it firmly to avoid crumbling. Wrap in plastic wrap and chill in the fridge for 1-2 hours.
Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
Cut the chilled log into 1/4 to 1/3-inch thick slices. If the slices crumble, press them back together with your hands.
Place the slices on the baking sheet, leaving about an inch of space between them.
Bake for 10-15 minutes, or until the tops are just starting to turn lightly golden brown.
Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
