Ingredients
For the Lentil Meatballs
190g (1 cup) green lentils, soaked
170g (1 cup) cooked white rice
1 medium onion, finely diced
1 large carrot, grated
3 cloves garlic, minced
1 teaspoon ground coriander
1 teaspoon Italian herb blend
1 teaspoon sea salt
2 tablespoons olive oil for frying
¼ teaspoon black pepper
For the Tomato Sauce
1 tablespoon tomato purée
1 teaspoon unbleached flour
1 teaspoon organic sugar (optional)
250ml (1 cup) water
Salt and freshly ground black pepper to taste
Fresh herbs for garnish
Instructions
Prepare the Meatballs
Soak Lentils:
Soak lentils in cold water for 3 hours
Drain and rinse thoroughly
