Hearty Chicken Noodle Soup

In a large pot, heat the olive oil over medium heat. Add the diced onion, chopped celery, and carrots. Sauté until the vegetables are tender.
Stir in the minced garlic, thyme, salt, and pepper. Cook for another minute.
Pour in the chicken broth and water, then add the shredded chicken and bay leaves. Bring to a boil.
Once boiling, add the egg noodles and cook until they are tender, about 7-8 minutes.
Remove the bay leaves before serving. Enjoy your hearty chicken noodle soup!
