Ingredients:
2 boneless, skinless chicken breasts
1 cup cooked rice (white, brown, or your preferred variety)
1 can corn kernels (or fresh grilled corn)
¼ cup mayonnaise
¼ cup sour cream
1 tablespoon chili powder
Juice of 1 lime
¼ cup fresh cilantro, chopped
½ cup cotija cheese, crumbled
Salt and pepper, to taste
Optional: avocado slices, hot sauce, tortilla strips for garnish
