Grilled Branzino with Lemon and Capers πŸŸπŸ‹

Preheat your grill to medium-high heat (about 400Β°F/200Β°C). If using a grill pan, heat it over medium-high heat.
Prepare the Fish:

Rinse the branzino and pat dry with paper towels. Score the fish by making 3 shallow cuts on each side.
Rub the fish inside and out with olive oil. Season generously with salt and pepper, both inside the cavity and on the skin.
Stuff the Fish:

Place a few slices of lemon and half of the minced garlic inside the cavity of each fish.
Grill the Branzino:

Place the branzino on the grill and cook for about 6-7 minutes per side, until the skin is crispy and the flesh is opaque and flakes easily with a fork. Use tongs and a spatula to gently flip the fish halfway through cooking.
Make the Lemon-Caper Sauce:

While the fish is grilling, heat a small pan over medium heat.
Add the remaining olive oil, minced garlic, and capers. SautΓ© for 1-2 minutes, until the garlic is fragrant.
Remove from heat and stir in the juice of 1 lemon and fresh parsley.
Serve:

Once the branzino is done, carefully transfer the fish to a serving platter.
Drizzle the lemon-caper sauce over the top of the grilled fish and serve with extra lemon wedges.
