Gee whiz! I made this meal for a potluck, and it disappeared in minutes

2 ripe avocados, peeled, pitted, and diced
1 large ripe mango, peeled and diced
1/4 red onion, finely chopped
1/2 cucumber, diced
1/2 red bell pepper, diced
Juice of 1 lime
2 tablespoons of chopped cilantro
Salt and pepper to taste
Drizzle of olive oil (optional)
Directions
In a large bowl, combine the diced avocados, mango, red onion, cucumber, and red bell pepper.
Drizzle the lime juice over the combined ingredients. This will not only add flavor but also help prevent the avocado from browning.
Add the chopped cilantro, and season with salt and pepper to taste. For an extra touch of richness, you can drizzle a bit of olive oil over the salad.
Gently toss all the ingredients together until everything is well mixed and evenly coated with the lime juice and seasonings.
Serve immediately, or if you prefer, let it chill in the refrigerator for about an hour to enhance the flavors.
Variations & Tips
If you’re in the mood to experiment, try adding some chopped jalapeño for a bit of heat, or throw in some roasted corn kernels for a sweet, smoky flavor.
