Salt and pepper to taste
Optional toppings: Chopped parsley, avocado slices, or chili flakes
Instructions
Prepare the Sweet Potato:
Peel the sweet potato and slice it into thin rounds or grate it for quicker cooking.
Cook the Sweet Potato:
Heat olive oil or butter in a non-stick skillet over medium heat.
Add the sweet potato slices or grated sweet potato and cook for 5–7 minutes, flipping occasionally, until tender and slightly crispy. Season with salt and pepper.
Cook the Eggs:
Push the cooked sweet potato to one side of the skillet or transfer it to a plate.
Crack the eggs into the skillet and cook them sunny-side up, scrambled, or however you like.
Combine and Serve:
Place the sweet potatoes on a plate and top with the eggs.
