English Muffin Breakfast Pizza

Prepare the English Muffins:
Preheat your oven to 375°F (190°C).
Arrange the split English muffin halves on a baking sheet, cut side up.

Cook the Eggs:
In a nonstick skillet, heat a little butter or oil over medium heat. Crack the eggs into the skillet and cook to your desired level of doneness (fried or scrambled). Season with a pinch of salt and pepper.

Assemble the Pizzas:
Place a cooked egg on each English muffin half. If using, sprinkle the crumbled sausage or bacon on top of the eggs.
Sprinkle the mozzarella and cheddar cheese over the top of each egg. Add diced bell peppers, onions, and any other desired toppings.

Bake the Breakfast Pizzas:
Bake the assembled pizzas in the oven for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the muffins are lightly toasted.

Garnish and Serve:
Sprinkle with dried oregano and garlic powder, and garnish with fresh parsley if desired. Serve hot and enjoy!
