Easy Cheesy Potato and Pea Bake

Ingredients:
• 3 large potatoes (about 600g), peeled and thinly sliced
• 250g peas
• Water and salt for boiling
• 2 tablespoons (30 ml) virgin olive oil
• 1 medium onion (about 100g), finely chopped
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon turmeric
• 2 tablespoons (8g) fresh parsley, chopped
• 1/4 cup (60 ml) water
• 3 large eggs, beaten
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 2 medium tomatoes (about 200g), sliced
• 1 cup (100g) shredded cheese (cheddar, mozzarella, or your choice)
• Optional: 2 tablespoons chopped fresh parsley or chives for garnish
• Optional: 1/4 cup (25g) grated Parmesan cheese for topping
