Instructions
1. Prepare the Filling:
In a medium saucepan, melt the butter over medium heat.
Add the diced apples, brown sugar, cinnamon, and nutmeg. Cook for 5β7 minutes, stirring occasionally, until the apples are softened.
Stir in the cornstarch slurry and cook for an additional 1β2 minutes until the mixture thickens. Remove from heat and let cool.
2. Preheat the Oven:
Preheat your oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.
3. Assemble the Cookies:
Roll out the pie crusts on a lightly floured surface. Use a round cookie cutter (about 3 inches in diameter) to cut out circles.
Place half of the circles on the prepared baking sheet. Add a small spoonful of apple filling to the center of each circle.
Cover with the remaining circles and press the edges with a fork to seal.
Brush the tops with beaten egg and sprinkle with granulated sugar for a golden, crispy finish.
4. Bake:

In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth.

For a shortcut, use canned apple pie filling and chop it into smaller pieces.
