In a small bowl, mix the sugar and cinnamon.
Arrange a few slices of apple in overlapping rows on each puff pastry square.
Sprinkle the apples with the cinnamon-sugar mixture.
4. Add Almonds and Egg Wash:
Sprinkle sliced almonds over the apples.
Brush the edges of the puff pastry with the beaten egg for a golden crust.
5. Bake:
Bake in the preheated oven for 18-22 minutes, or until the pastry is puffed and golden brown.
6. Glaze:
While the pastries are still warm, brush the apples with honey or apricot jam for a shiny finish.
Let cool slightly.
7. Serve:
Dust with powdered sugar before serving, if desired. Serve warm or at room temperature.
Storage:
Store any leftovers in an airtight container at room temperature for up to 2 days. Reheat in a 350°F (175°C) oven for a few minutes to crisp up.
