Didn’t think to do this but these turned out fab!
In a large mixing bowl, combine the drained canned chicken, eggs, cheddar cheese, almond flour, green onions, garlic powder, salt, and black pepper.
Mix everything together until well combined. The mixture should be moist but hold together when formed into patties.
Heat the olive oil in a large skillet over medium heat.
Scoop about 1/4 cup of the chicken mixture and form it into a patty. Place it in the hot skillet.
Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and cooked through.
Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
Repeat with the remaining chicken mixture, adding more oil to the skillet as needed.
Serve warm with your choice of sides.
Variations & Tips
For a bit of a kick, add a pinch of cayenne pepper or some chopped jalapeños to the mixture. If you prefer a different cheese, try mozzarella or pepper jack for a unique flavor. You can also add some finely chopped bell peppers or zucchini for extra veggies. For a gluten-free option, ensure your almond flour is certified gluten-free. These fritters can also be baked in the oven at 375°F (190°C) for about 15-20 minutes if you prefer a less oily preparation.
