Crispy Potato & Cheese Bombs with Garlic Butter

1. Preheat oven to 400°F (200°C) and grease a baking sheet.
2. Boil the diced potatoes until tender, then mash them in a bowl.
3. Stir in cheddar cheese, Parmesan cheese, and parsley. Season with salt and pepper.
4. Shape the mixture into small balls and place them on the baking sheet.
5. In a small saucepan, melt butter and sauté garlic until fragrant.
6. Brush the potato balls with the garlic butter mixture.
7. Bake for 20-25 minutes or until golden and crispy.
