Crispy Cheese Potato Sticks

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
2. Cut the potatoes into thin sticks, about 1/4 inch thick.
3. Place the potato sticks in a large bowl and toss them with olive oil, salt, pepper, and any desired herbs or spices until evenly coated.
4. Spread the potato sticks out on the prepared baking sheet in a single layer, making sure they’re not overlapping.
5. Bake in the preheated oven for about 20-25 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through.
