Directions:
Preheat oven to 350°F (175°C).
In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
Stir in vanilla extract, flour, and salt until combined.
Fold in chopped cranberries, lime zest, and lime juice until evenly distributed.
Roll dough into 1-inch balls and place on an ungreased baking sheet, spacing about 1 inch apart.
Bake for 15-18 minutes or until the bottoms are lightly golden.
Let the cookies cool for a few minutes, then roll them in the remaining 1 cup of powdered sugar while still warm.
Once completely cool, roll them in the powdered sugar again for a second coating.
