Instructions:
In a large pot, combine the chicken pieces, water, chicken broth, onion, celery, carrots, garlic, bay leaves, salt, pepper, thyme, and parsley. Bring to a boil, then reduce heat and simmer for about 1 hour or until the chicken is tender.
Remove the chicken from the pot and shred the meat. Discard the bones and return the shredded chicken to the pot.
In a mixing bowl, combine the flour, baking powder, and salt. Stir in the milk and melted butter until a thick batter forms.
Drop spoonfuls of the batter into the simmering broth. Cover and cook for 10 minutes without lifting the lid.
After 10 minutes, uncover and gently stir the dumplings. Simmer for an additional 10-15 minutes until the dumplings are cooked through and the broth has thickened.
Adjust seasoning with more salt and pepper if needed. Remove the bay leaves before serving.
