Coconut Shrimp Fried Rice

1. Prepare the Coconut Shrimp:
Set Up Breading Station: In one bowl, place the beaten eggs. In another bowl, mix the shredded coconut, panko breadcrumbs, salt, pepper, and paprika.
Coat the Shrimp: Dip each shrimp first into the egg, then coat thoroughly in the coconut-panko mixture. Set aside on a plate.
2. Fry the Shrimp:

Stir in Rice: Add the cooked jasmine rice to the pan, breaking up any clumps. Stir well to combine with the vegetables.
4. Season the Rice:
Add Sauce and Seasoning: Pour in the soy sauce, fish sauce (if using), and lime juice. Stir to coat the rice evenly. Cook for another 2-3 minutes until heated through. Taste and season with salt and pepper as needed.
5. Combine and Serve:
Add Shrimp: Gently fold in the crispy coconut shrimp and sliced green onions into the fried rice, mixing until just combined.
Plate the Dish: Serve the coconut shrimp fried rice in bowls, garnished with fresh cilantro or basil.
Tips:
Use Day-Old Rice: For the best texture, use day-old rice as it is less sticky and fries better. If using freshly cooked rice, spread it out on a baking sheet to cool before using.
Customize Vegetables: Feel free to add or substitute any vegetables you like, such as bell peppers, zucchini, or snap peas.
Spice it Up: Add some red pepper flakes or chopped fresh chili for a bit of heat.
Make it a Meal: You can add scrambled eggs or tofu for extra protein if desired.
