How to prepare Christmas Log
Beat the yolks, with the sugar and the lemon, until creamy. Add the flour. Beat the egg whites until stiff and mix everything carefully.

Put aluminum foil on the oven tray and spread the dough, giving it a rectangular shape, bake it in the oven at 200 º C for 15 minutes.

Remove the aluminum foil, place the resulting cake on a cloth and, with the help of this, roll it up. Let it cool.

Melt the chocolate in a bain-marie and set it aside. Beat the butter with the sugar, add the rum, and mix it with the chocolate.

Unroll the cake, cover it with the chocolate cream, reserving a little to decorate at the end. Roll it up again, cover it with a layer of chocolate. Make some decorations with a fork and place the cherries on top.

Put it to cool in the refrigerator before serving.
