Ingredients: • 400 grams cherries or pitted cherries • 500ml milk • 8 grams vanilla sugar • 15 grams agar (use according to package directions) • 250ml condensed milk • 400 grams yogurt or sour cream
Directions:
Prepare the Cherry Puree:
Grind 400 grams of cherries or pitted cherries into a puree.
Prepare the Milk Mixture:
In a saucepan, mix 500ml of milk with 8 grams of vanilla sugar and 15 grams of agar. Follow the agar’s package directions for proper use.
Heat the mixture until the agar is fully dissolved.
Add Condensed Milk and Yogurt:
Stir in 250ml of condensed milk and 400 grams of yogurt or sour cream into the milk mixture to create a milk mass.
Incorporate the Cherry Puree:
Add a third of the cherry puree to the milk mixture and stir well.
Divide the Milk Soufflé:
Divide the milk soufflé into three parts:
Leave most of it in the original container.
Divide the remaining portion into two separate bowls.
Add the remaining cherry puree to these two bowls, creating different color intensities.
Puree the Soufflé:
Quickly blend the soufflé in each bowl to ensure even color distribution. Note: Agar begins to set at 40°C, so if the mixture starts to harden too soon, gently heat it over low heat while stirring.
Layer the Soufflé:
In a deep bowl, pour the three shades of cream one at a time, layering them to create a gradient effect.
Refrigerate:
Refrigerate the bowl until the soufflé is fully solidified.
