Cheesy Pepperoni Pizza Roll-Ups with low-carb tortillas

Place a large nonstick skillet over medium-high heat.
Sprinkle ½ cup of mozzarella cheese in the center of the skillet and let it melt without stirring.
Once the cheese begins to melt and bubble, place a tortilla on top, gently pressing it into the melted cheese.
When the cheese starts to brown and crisp, carefully flip the tortilla. The cheese should be attached to the tortilla.
Spread about 1 tablespoon of pizza sauce in the center of the tortilla and top with 6 slices of pepperoni.
Roll the tortilla carefully from one side to the other, securing the cheese and pepperoni inside.
Repeat the steps with the remaining ingredients to make more pizza roll-ups.
