BREAKFAST SWEET POTATO

Preheat oven to 350°F.
Prick sweet potatoes with a fork, coat with oil and salt, and bake for 60-90 minutes until fork-tender.
Cut each potato in half lengthwise and scoop out the center into a bowl.
Mix bacon, butter, and cheese into the potato, then fill the potato shells with this mixture.
Create a well in each potato, crack an egg into each, season with salt and pepper, and bake for 15-20 minutes until the egg is set.
Top with minced scallion if desired.
