Blender Lemon Pie

Directions

1. Preheat the Oven
Preheat your oven to 350°F (175°C) to ensure your pie bakes evenly.

2. Prepare the Lemons
Wash the lemons thoroughly. Slice them into rounds and remove any seeds. Leaving the peel on adds an extra punch of lemon flavor and texture!

3. Blend the Filling
In a blender, combine the lemon slices, eggs, sugar, melted butter, vanilla extract, and salt. Blend on high until the mixture is completely smooth and creamy. This should take about 1–2 minutes.

4. Assemble the Pie
Place your pie crust into a 9-inch pie dish. Pour the blended lemon filling into the crust, spreading it evenly.

5. Bake the Pie
Bake the pie in the preheated oven for 40–45 minutes, or until the top is golden and the center is set. You’ll know it’s ready when the filling no longer jiggles in the middle.

6. Cool and Serve
Let the pie cool for about 30 minutes before slicing. For best results, chill it in the fridge for an hour or two to set completely.
