Been making this for over a decade and it’s always a crowd fave!

1 cup minute rice (uncooked)
1 1/2 lbs boneless, skinless chicken breasts
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup
1 cup chicken broth
1 packet onion soup mix
Salt and pepper to taste
Optional: 1 cup frozen peas or carrots
