Beef Mushroom Swiss Cheese Meatloaf 🍄✨

1️⃣ Preheat & Prepare:

Preheat oven to 375°F (190°C). Grease a baking sheet or loaf pan.

2️⃣ Sauté the Mushrooms & Onions:

Heat a skillet over medium heat. Add a little oil and sauté mushrooms, onions, and garlic until soft (about 5 minutes). Let cool slightly.

3️⃣ Mix the Meatloaf:

In a large bowl, combine ground beef, sautéed mushroom mixture, breadcrumbs, egg, Swiss cheese, milk, Worcestershire sauce, salt, pepper, and thyme. Mix until just combined (do not overmix).

4️⃣ Shape & Bake:

Form the mixture into a loaf shape on a baking sheet or place it in a loaf pan.
Bake uncovered for 30 minutes.

5️⃣ Add the Glaze & Toppings:

Mix ketchup, Dijon mustard, and brown sugar in a bowl. Spread over the meatloaf.
Top with sliced mushrooms and shredded Swiss cheese.
Bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).

6️⃣ Rest & Serve:

Let the meatloaf rest for 10 minutes before slicing.
Garnish with fresh parsley and serve warm!
