BEEF ENCHILADA CASSEROLE

Instructions:

Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef over medium-high heat until it’s browned and crumbled. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet and cook for a few minutes until the onion becomes translucent.
Stir in the cumin, chili powder, salt, and pepper. Mix well to evenly distribute the seasonings.
Add the diced tomatoes and green chilies to the skillet and cook for a few more minutes to combine the flavors.
Grease a 9×13-inch baking dish. Place 2 tortillas on the bottom of the dish, overlapping them slightly.
Spoon half of the beef mixture over the tortillas and spread it evenly.
Pour half of the enchilada sauce over the beef layer.
Sprinkle a third of the shredded cheese on top of the sauce.
Repeat the layers by placing 2 more tortillas, the remaining beef mixture, and another third of the cheese.
Top with the final 2 tortillas and the rest of the enchilada sauce.
Finish by adding the remaining cheese on top.
Cover the casserole with aluminum foil and bake in the preheated oven for 25-30 minutes, or until it’s heated through and the cheese is melted.
If desired, you can remove the foil for the last 5-10 minutes of baking to brown the cheese slightly.
Once the casserole is done, remove it from the oven and let it cool for a few minutes before serving.
Garnish with sour cream, diced tomatoes, sliced olives, and fresh cilantro if you like.
