Apricot trifle with yogurt

Cut the apricots in half and remove the stones.
Put the fruit in a saucepan with the vanilla pod split in two, a little water and the sugar.
Bring slowly to a boil.
Let the fruit halves simmer until they are very tender but do not break.
Remove the vanilla pod, reserve 4 apricot halves and place the rest of the mixture in a food processor to obtain a coulis.
Let cool.
Brown the flaked almonds in the oven or in a pan.
Make a caramel with the brown sugar, pour onto a silicone mat and sprinkle with almonds.
Let cool and harden.
Mix the orange blossom water with the yogurts in a bowl and whisk everything together.
Take 4 glasses and alternately pour the flavored yogurt and the apricot coulis.
Place half of an apricot and present with a piece of almond caramel.
Serve immediately.
