Ingredients:

For the crust:

1 ½ cups graham cracker crumbs
¼ cup granulated sugar
6 tbsp unsalted butter, melted
For the apple filling:

4 large apples, peeled, cored, and sliced
2 tbsp lemon juice
½ cup granulated sugar
1 tsp cinnamon
¼ tsp nutmeg
1 tbsp cornstarch
For the cheesecake layer:

3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1 cup sour cream
For the crisp topping:

1 cup old-fashioned oats
¾ cup brown sugar
½ cup all-purpose flour
½ tsp cinnamon
6 tbsp unsalted butter, cubed
Directions:

Prepare the crust:
Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand. Press this mixture into the bottom of a springform pan (9-inch). Bake for 10 minutes, then set aside to cool.

Make the apple filling:
In a large bowl, toss the apple slices with lemon juice. Add the sugar, cinnamon, nutmeg, and cornstarch, mixing well until the apples are coated. Set aside to allow the flavors to meld.

Prepare the cheesecake layer:
In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add the vanilla extract and eggs one at a time, beating well after each addition. Once combined, fold in the sour cream until smooth.

Assemble the cheesecake:
