Apple Cookies: The Original Way to Make Them Delicious

Directions
Prepare the Dough:
In a bowl, combine the ricotta cheese, flour, softened butter, sugar, and baking powder.
Knead the mixture by hand until it forms a homogeneous dough.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Prepare the Apple Filling:
In a separate bowl, mix the diced apples with 200g of sugar and 1 teaspoon of cinnamon. Set aside.
Shape the Cookies:
Roll out the chilled dough on a floured surface and cut it into discs.
Brush each disc with beaten egg and place a spoonful of the apple mixture in the center.
Form the Cookies:
Fold the discs over to create half-moons or croissants, sealing the edges well.
Roll the filled cookies in the remaining cinnamon and sugar mixture.
Bake:
Preheat your oven to 356°F (180°C).
Place the cookies on a baking sheet lined with parchment paper and bake for 30 to 40 minutes, or until golden brown.
