Apple Cinnamon Coffee Cake

¾ cup (150g) light brown sugar, packed
½ cup (65g) all-purpose flour
1 teaspoon ground cinnamon
4 tablespoons (60g) unsalted butter, melted

For the Glaze (Optional):

1 cup (120g) powdered sugar, sifted
2 tablespoons (30ml) milk
½ teaspoon vanilla extract

Instructions:

Step 1: Preheat and Prepare

Preheat your oven to 350°F (175°C).
Grease and flour a 9-inch square or round baking pan, or line it with parchment paper for easier removal.

Step 2: Make the Streusel Topping

In a medium bowl, mix together the brown sugar, flour, and cinnamon.
Stir in the melted butter until the mixture forms crumbs. Set aside.

Step 3: Mix Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

Step 4: Cream Butter and Sugar

In a large mixing bowl, use a hand or stand mixer to cream the butter and sugar until light and fluffy (about 2-3 minutes).
Beat in the eggs one at a time, then add the vanilla extract.

Step 5: Combine Wet and Dry Ingredients

Add the dry ingredients to the wet ingredients in three additions, alternating with the sour cream. Start and end with the dry ingredients. Mix just until combined.
Gently fold in the diced apples.

Step 6: Assemble the Cake

Pour the batter into the prepared pan and spread it evenly.
Sprinkle the streusel topping evenly over the batter.

Step 7: Bake

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.

Step 8: Make the Glaze (Optional)

In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.

Drizzle the glaze over the cooled cake.
