Instructions:
Butterfly the Chicken:
Use a sharp knife to cut the chicken breasts in half, leaving about 1/2 inch uncut on one side to allow closing them up.
Season both sides of the chicken with salt and pepper.
Prepare the Filling:
Add the feta cheese and cooked spinach to the middle of each chicken breast, then fold them up.
Coat the Chicken:
In a small bowl, mix the egg and 2 tablespoons of water.
Brush the egg wash over the chicken breasts and coat them with bread crumbs.
Prepare the Air Fryer:
Spray your air fryer basket with cooking spray.
Use toothpicks to secure the chicken breasts or place them seam-side down into the air fryer basket.
Add some extra seasoning on top.
Cook the Chicken:
Spray the tops of the chicken breasts with olive oil spray and place them in the air fryer basket.
Set the air fryer to 350°F (175°C) and cook for 15-20 minutes, depending on the thickness of the chicken breasts.
Ensure the internal temperature of the chicken reaches 165°F (74°C) before removing them from the air fryer.

Plate the chicken breasts, serve, and enjoy!
