Ingredients for Air Fryer Gammon

1 small to medium gammon joint (about 2-3 pounds)
1 tablespoon olive oil
2 tablespoons honey or maple syrup
1 tablespoon Dijon mustard
1 tablespoon brown sugar
Cloves (optional, for studding)

Step-by-Step Recipe for Air Fryer Gammon

1. Prepare the Gammon
If your gammon joint comes wrapped in string or netting, remove it before cooking. Pat the gammon dry with paper towels to ensure the glaze adheres well during cooking.

2. Make the Glaze
In a small bowl, combine honey (or maple syrup), Dijon mustard, and brown sugar to create the glaze. This mixture will give the gammon its delicious, sticky exterior. Set aside for later use.

3. Preheat the Air Fryer
Preheat your air fryer to 180°C (350°F) for a few minutes to ensure even cooking.

4. Cook the Gammon
Rub the gammon joint with olive oil and place it into the air fryer basket. Cook for approximately 30 minutes at 180°C (350°F). After 30 minutes, check the internal temperature using a meat thermometer. It should read 68°C (155°F) for the meat to be cooked through, but not overdone.

5. Glaze and Crisp the Gammon
Once the internal temperature is close to 68°C, generously brush the glaze over the entire surface of the gammon. If you like, you can stud the gammon with cloves for extra flavor and a festive presentation. Return the gammon to the air fryer and increase the temperature to 200°C (400°F). Cook for an additional 10 minutes or until the glaze is golden and slightly caramelized.

6. Rest and Slice
After cooking, let the gammon rest for about 5-10 minutes. This allows the juices to redistribute throughout the meat, keeping it moist and flavorful. Once rested, slice the gammon to your desired thickness and serve.
