I first stumbled upon this recipe during a particularly hectic week at work, and it quickly became a staple in my kitchen. It’s a one-pot wonder that combines the earthy flavors of mushrooms with the fresh taste of spinach, all tied together with the comforting texture of orzo pasta. Perfect for when you want something delicious but don’t have hours to spend in the kitchen.
This Spinach Mushroom Orzo pairs beautifully with a simple green salad or some crusty bread to soak up all the flavors. If you’re looking to add a bit more protein, grilled chicken or shrimp would complement the dish nicely. A glass of white wine, like a crisp Sauvignon Blanc, would also be a lovely addition to your meal.

1 cup orzo pasta
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
8 ounces mushrooms, sliced
4 cups fresh spinach
2 cups vegetable broth
1/4 cup grated Parmesan cheese
